My Favorite Rice Dish

It’s been long since I cooked in my favorite Rice dish – Hyderabadi Veg Biryani. This I had learnt from a roomie during my college days. He was visiting my place after years. Though of cherishing the old memories. The best part was he just relished the food I cooked and we had a great time. So, here is my most loved dish recipe for you all:

Method

  • Boil the rice and divide them into three parts. Then colour one part saffron, other green and leave one white. Use organic food colors. Also boil the mix vegetables, strain the water and keep them aside.
  • Then take a mixer bowl add curd, coriander, pudina , salt and blend it. Make a fine paste and let it cool in fridge.
  • Now take a deep vessel , add ghee, cumin seed , tej pata , moti elaichi, long , ginger, black pepper . Add long diced onions and cook until golden brown. Then add the tomatoes cook till they are soft. Turn off the gas , and blend these.
  • Then take a pan add oil and cook this mixture for 10 mins, as you see the oil separating then add boiled vegetables , hing , biryani masala , salt , little water and cook for 5mins.
  • Once mixture ready , take a baking dish greased with butter, add white rice then spread the curd mix , vegetables , curd mix , green rice , vegetables , curd mix , yellow rice on top. Decorate the top with dry fruits and fried potatoes.
  • Cove the tray with wheat and bake for 10 mins.
  • Remove the cover, serve hot with raita.

Materials

  • 1tbsp. – ghee, butter, oil
  • 1 cup –boiled vegetables, curd, pudina + coriander mix ,boiled rice.
  • 1 big onion and tomato
  • Pinch of colors yellow,green , salt, saffron , hing.
  • 2-3 – cloves ,tej pata , elaichi , black peppers.
  • 1tsp. – jeera, dry fruits.
  • 1tbsp. – biryani masala
